Lazio is an area
of outstanding beauty and history. Located between the Appennines and the
Tyrrhennian Sea, the region is known for its volcanic lakes, mountains, gorges,
olive groves and vineyards.
Our hotel is in
the heart of Etruria, the region between Tuscany and Rome and land of the
Etruscans. It is an area of immense wealth due to the important history of the
Etruscans and more recently, the Romans. In our private kitchen we offer
hands-on instruction on home-style and light Italian cuisine.
The emphasis is
on simplicity, quality, fresh ingredients and easy to make recipes, including
gnocchi, the famous Etruscan based soup Aquacotta, frittata and risotto.
Lessons are complemented by visits to wineries, an ancient olive mill, the
making of Ricotta cheese and gathering of mushrooms.
Our walk takes
us through splendid and almost untouched countryside, dotted with traditional
farms and countless acres of ancient olive groves. Everywhere in Lazio we will
see reminders of the region’s Etruscan, Roman and Medieval past. We are
exposed to more art and culture than we ever thought possible. Highlights
include a walk around Civita, Pitigliano and Norchia, one of the most important
Etruscan centres in Lazio.
On day 7 we
return to Florence where the Flavours of Italy tour concludes.
Our Hotels & Cuisine
We stay in a
wonderful hotel in Bolsena, right at the edge of Lake Bolsena. It is set in a
nice garden, complete with a swimming pool. We have selected a number of
individual restaurants which highlight the diversity of the “Cucina
Casalinga”.
The two dinners during our 2 days of cooking will be in the
cosy dining room of our private house, enjoying our efforts from day to day,
together with some excellent local wines.
